Chicken Kiev ans sautéed spinach and tomato
Ingredients: (Serves 2)
Method:
- 2 chicken breasts
- 4 cloves garlic, minced
- 4 Tablespoons of butter (kerry gold) or ghee- do not melt
- 1/2 cup almond flour
- 1 egg, whisked
- 2 Tbsp garlic powder
- 1 Tbsp fresh parsley finely chopped
- Salt/Pepper
Method:
- Preheat oven to 200c
- Cut a slit in each chicken breast and make a hole in the chicken breast with a small knife (cut out a small piece of the chicken to make the hole but do not to cut through the chicken breast). (Alternatively, pound the chicken breast into a thin layer.
- Put 2 Tbps of butter and 2 minced cloves of garlic into each hole of the chicken breast. (Alternatively, roll these into the pounded chicken breast.)
- Place the egg into a bowl and whisk
- In another bowl, mix together the almond flour, garlic powder, salt,pepper and parsley to form the breading
- Pinch the slit closed on each chicken breast and dip the chicken into the egg
- Then Dip chicken into the almond flour breading mixture.
- Bake for 15-20 minutes until cooked
Banana Pancakes and Berries
Ingredients
Method:
Top with some berries and agave and stack pancakes

- 1 Tbsp coconut oil
- Optional- berries, nut butter, greek yoghurt, agave
Method:
- Crack the eggs into bowl and banana into a blender and blend
- Heat up the coconut oil in a pan on a low heat until melted
- Pour mixture into pan and fry until golden.
- Flip over and fry on the other side.
Top with some berries and agave and stack pancakes

Poached egg & sweet potato cakes
Ingredients: (Serves 2)
- 2 Small Sweet Potatoes
- 1 Egg
- Coconut Oil
- Pinch of Salt & Pepper
Method:
- Peel and grate the potatoes
- In a bowl combine potatoes, egg, salt and pepper and mix together
- Turn the mixture into cakes using your hands, about an inch thick.
- Heat some coconut oil in a hot pan
- Fry these for about 3 mins each side then place them in an oven for 15mins at 200c
Banana Bread/Muffins
Ingredients

- 2 cups of almond flour (ground almonds)
- 2 tbsp coconut oil, melted
- 1 tsp vanilla
- 3 eggs
- 2 tsp cinnamon
- 1 tsp baking powder
- 3 ripe bananas (mashed)
- 2 tbps of honey/honey substitute agave (optional)
Method
- Preheat oven to 170
- Mix all of the dry ingredients together in a bowl
- In a separate bowl mash the banana and mix in the wet ingredients
- Add the wet into the bowl of dry ingredients and mix well
- Line your muffin tin with muffin holders
- add your mixture.
- Place in the oven and bake for 25 mins
- You can check to see if they are done by sticking a toothpick into the centre of the muffin, if it comes out clean they are ready! Enjoy ☺
Cinnamon Oat Bread
Ingredients:
Method:
- 3 cups of GF oats,
- 2 bananas,
- 1 cup of raisins,
- 1/2 can of coconut milk
- pinch of salt
- 1 tsp of baking powder
- 1 tsp of baking soda
- 1 tsp cinnamon
- 2 eggs
- coconut oil (greasing tin) OR parchment paper use tin liners (woodies etc.)
Method:
- Place 2 cups of oats in a processor until they resemble flour.
- Place this into a mixing bowl and add the rest of the oats except for roughly 1- 2 tbsp worth (this is for the topping)
- Add baking powder salt and cinnamon.
- In processor blend together the coconut milk, eggs and bananas.
- Add this slowly and gradually to the dry mix in the mixing bowl, the mixture should be wet however not too runny!
- Add raisins and transfer to a loaf tin which has been greased with coconut oil.
- Sprinkle remaining oats on top.
- Bake at 180 for 50 mins
- reduce heat to 160 and bake for another 10-15 mins.
- Let cool on a wire rack and then slice.
Spinach, Feta, Ham Pizza
Who doesn't love pizza?! This is a great Paleo friendly Pizza that will curb any pizza cravings! This is a quick and easy recipe that doesn't involve cauliflower like most paleo pizzas!

- 2 Eggs
- 2 Cup. Almond Flour
- 3 Tbsp. Olive Oil
- 1/4 tsp. Baking soda
- 1 tsp. Garlic Powder

Method:
- Mix all the dry ingredients together.
- Add the mixed wet into the dry and combine together
- Place some oil on baking paper and place on a tray
- Roll out out the required size
- ii the dough is sticky in texture, place some baking paper over the dough and then roll out thinly with a rolling pin
- Place into the oven at 170C for 15minutes. Time will vary according to the thickness.
- Remove from the oven.
- Add some passata over the base the add what ever toppings you like. ( I used spinach, feta, mushrooms, onions, peppers and some ham)
- Place back into the oven for a further 10mins (if using cheese- until this has melted)
- Enjoy :)
Mouth-Watering Balsamic Chicken
This is a really tasty chicken dish that is super easy to make. This can be served on a bed of quinoa, cauliflower rice or wholegrain rice, alongside a side salad! The following recipe serves 4.

- 4 bonelss chicken breasts
- salt and pepper
- 1 teaspoon of coconut oil
- 1/3 cup of balsamic vinegar
- 1.4 cup of chicken stock
- 2 garlic cloves, minced
- 3 teaspoons of butter
- Cherry tomatoes
- Parsley to garnish (optional)
Method
- Lightly pound this chicken to 1/4-inch. This minimise the cooking length. To reduce the mess place the breasts/tenders in a zipper bag (unsealed) or cover with cling film before pounding.
- Sprinkle the salt and pepper on both sides of the chicken.
- In a large frying pan, pro the coconut oil and heat to a medium temperature.
- Add the chicken breasts and cook, turning once for about 7-10 minutes
- While the chicken is cooking, in a mixing bowl mix the vinegar, chicken stock and garlic in a bowl
- Remove the chicken from the pan
- Add the mixture from the mixing bowl into the frying pan. Cook over a medium heat for 2-4 minutes or until the mixture is reduced and syrupy
- Add the butter and mix to melt
- Place chicken on serving plate and spoon the sauce over the chicken.
- Serve this with a side salad (optional rice, quinoa etc)
Baked eggs in ham cups!
Broccoli and feta salad with chicken
Ingredients:
- 110g hazelnuts (any nut works)
- 400g broccoli florets – bite sized
- 110g feta cheese- cut into bite sized chunks
- 225g cherry tomatoes, halved
- Toast the hazel nuts in a pre-heated, 180 degrees C oven, spread nuts out on a baking sheet, roughly 5-10 minutes. Once done, set aside and let them cool.
- Bring a large pot of water to the boil. Add the broccoli to the pot of water and blanch for 60 seconds, you should see the broccoli turn a vibrant green. Drain the broccoli pieces and set aside.
- Slice the cherry tomatoes in half
- Slice the feta into bite size pieces
- Gently toss all the ingredients together in a large bowl. Season with pepper to taste.
- Serve as a side dish or as a lunch, I added some chicken with mine!
Homemade Popcorn
One of my favourite movie snacks of course is non other than Popcorn! My homemade popcorn is made in a pot, no unhealthy microwave needed here!

1.Heat 2 tablespoons of coconut oil in a medium sized pot.
2.When the oil is hot add enough popcorn kernels to cover the bottom of the pot in a single layer (about 1/3 cup of kernels).
3.Cover with the lid and shake gently over a medium heat.
4.When popping stops, remove from heat.
5. Sprinkle with salt, and shake so that it disperses evenly.
6. Enjoy :)

This is a great quick and easy recipe for my Paleo Egg Muffins. These are so convenient and nutritious. Perfect for anyone on the go.These can be made in bulk and will last a good few days once stored in the fridge! Here it goes!

- 2 scallions Chopped
- 1 pepper;
- hanful of mushrooms; Chopped
- Handful of spinach chopped

- Original recipe makes 5 Servings+
Method
- Preheat oven to 350 degrees F (175 degrees C).
- Grease muffin cups or line with paper liners.
- Beat eggs together in a large bowl.
- Mix your varied ingredients ham,pepper, onion, salt, black pepper into the mixed eggs.
- Pour your egg mixture evenly into your muffin tin.
- Bake in a preheated oven for about 18 to 20 minutes.

Available in most supermarkets, (Dunnes Stores, Tesco etc ) and various Health Shops. They can be sprinkled over almost anything and are practically tasteless! - Flaked almonds (Optional)

- Add all the ingredients into your jar
- Mix this up together so that all your ingredients are now covered by the milk/yoghurt and a hold a smooth texture
- Leave in fridge overnight
- The next morning remove the pudding from the fridge
- Now to finish garnish the top with any toppings of your choice such. Be Creative!

Patatas Bravas
Patatas Bravas one of my favourite tapas dishes! Who doesn’t like tapas right?!!! So here I have substituted the white potato for a paleo friendly sweet potato. I added some chicken to mine but this would also be lovely with turkey or prawns, or alternately on its own! This is a great dish to freeze or for having for your lunch the next day.

- 6 sweet potatoes ( I recommend the bagged sweet potatoes from Tesco- perfect size!
- 1 onion
- 1 garlic clove/powder
- 1tsp coconut oil
- 1tsp basil
- 1 tsp paprika
- 1 tsp cayenne pepper
- salt/peper
- 1 tsp tomato puree
- 1 jar of passata/chopped tomatoes
Method
- Peel the sweet potatoes, then cut these into small cubes you will par boil these for about 8-10mins
- Heat the coconut oil in a pan, then fry up your chopped garlic and onion
- Add the spices to the sauce and fry for 20 seconds
- Add the passata, puree and basil and heat through
- Next add the sweet potato cubes into your tomato sauce, gently stiring to make sure the cubes are now covered in the sauce
- Leave this sit on a low heat until you are ready to serve.
OPTIONAL
Add chicken, prawns etc to finish off the dish.
